White Chocolate Peppermint Cashew Bites



Minty, creamy, smooth, and sweet - these bites are the perfect little snack! They will satisfy your sweet tooth with such a delicious burst of flavour and are super nourishing and energizing with healthy fats and grass fed collagen. Did I mention they only take a few minutes to whip up!?


Like most of our recipes, these little treats can be made in any of our elixir flavours - so if you have another flavour on hand that you prefer, try it out!


While the recipe calls for raw honey to sweeten, you could also omit or use a sweetener like monk fruit or stevia if you are looking for a sugar free snack!


White Chocolate Peppermint Cashew Bites


Ingredients:

1 cup raw cashews (see note for substitutes)

1/4 cup White Chocolate Peppermint elixir

1-2 TBSP raw honey, to taste (see note for substitutes)

1 tsp vanilla extract


Directions:

Combine all ingredients in a food processor and process until a dough forms. I like to leave a few small chunks of cashews for texture, but you could process until smooth if you prefer!


Roll into small balls, about a heaping tsp each, and place on a parchment lined plate or baking tray. Set in the freezer for 15 minutes.


Optional step: gently melt 1 heaping TBSP of our Salted Hot Chocolate either in a bowl over warm water or in the microwave for 10 seconds. Drizzle over balls and place back in the freezer for 5 minutes. You could also melt chocolate chips or whatever chocolate you have on hand!


Store balls in an airtight container in the fridge for up to 3 weeks.


Notes:

I love cashews for the extra creaminess and mild flavour they lend to this recipe, however they could be substituted for any other combination of nuts/seeds, even shredded coconut!

You may omit the honey or substitute it for another sweetener of choice. If using a non-liquid sweetener you may need to add a very small amount of milk to add moisture.

If you don't have a food processor, you could blend the cashews until they are in very small chunks then mix everything by hand in a bowl - it'll be a bit of a workout but I believe in you ;)
